This is an easy muffin recipe that's really healthful and filling. If you freeze them, you'll enjoy them as a great grab-and-go breakfast for busy mornings.
1/4 c dry quinoa
1/4 c sugar substitute
1-3/4 c dry quick oats
1-1/2 t baking powder
1/2 t salt
1 t cinnamon
dash of nutmeg
1 c soy milk
1 t vanilla extract
2 eggs
1 apple, peeled and chopped
1/2 c pumpkin puree
cooking spray
Preheat oven to 325F . Combine dry ingredients in one bowl and wet ingredients in another bowl. Combine dry and wet ingredients together. Mix well. Grease a "6-large-muffin" tin with butter or cooking spray. Pour batter into the slots and bake for about 30 minutes, or until a toothpick comes out clean.
